This oyster and shell knife is a new ode to the sea, with its rounded design reminiscent of the waves receding on the sand. In close collaboration with Ostra Régal, L’écume has been tested and approved by Jean-Luc Vianey MOF poissononnier – écailler 2011, Estonian Anti Lepik, 5-time world champion oyster opener, and Renars Purmalis, Lithuanian world champion oyster opener in 2024.
Ecume comes in two versions: a 2-sided blade or a 4-sided blade to suit everyone’s preferences and tastes.

Do not put L’écume in the dishwasher.
After each use, rinse your blade with clear water. You can also wipe the blade with a damp sponge and a drop of neutral washing-up liquid.
To avoid limescale marks on the blade, wipe with a dry cloth afterwards.
